Ingredients
- 2 rooster breasts
- 2 rooster drumsticks
- 2 onions finely chopped
- 4 whole garlic cloves
- 100 ml organic extra virgin olive oil
- 800 g chopped tomatoes or concassé
- 400 ml chicken broth
- 200 g hilopites
- 1 bay leaf
- salt
- pepper
- a little mint chopped
- grated cheese

- 1 saucepan
Making
Put the rooster in a saucepan where you have already poured half the amount of olive oil, salt it and sauté it on high heat from all sides.
Add the onions and garlic cloves. Continue sautéing for an additional 3 minutes.
Then add the tomatoes and bay leaf, cover the saucepan and simmer.
You can remove the breasts for about 30′ and continue to cook the drumsticks for 45′.
Pour the chicken broth just before the rooster is ready. At the same time, add the hilopites.
Cook over high heat the hilopites and put the breasts back on the saucepan.
Serve with grated cheese !
