Kolokythokeftedes or zucchini balls are one of the best and most well-known greek mezzes which are always on the table during summer !
Ingredients
- 2 big zucchinis
- ½ onion finely chopped
- 2 fresh onions finely chopped
- ¼ bunch of parsley finely chopped
- ¼ bunch of mint finely chopped
- 1 egg whisked
- 100 g crumbled feta
- salt
- pepper
- 4 tablespoons flour
- olive oil for the pan
Utensils
- 1 pan
- 1 big bowl
- 1 grater
- 1 colander
- 1 plate
- absorbent paper
Making
Wash the zucchinis, rub them with a thick grater and put them in a strainer. Sprinkle with salt and let them stay for 10 minutes. Squeeze them well and put them in a bowl.
Add the onions, the mint, the parsley, the whisked egg and the feta in the bowl. Add the pepper and salt (be careful because you have already salted the zucchini and the feta).
Stir well with a spoon and add the flour little by little until you have a thin porridge that falls from the spoon by turning it.
Heat the olive oil in moderate to strong heat and after then, add a few tablespoons of the mixture. Fry about 2 on each side. Do not put a lot of spoon from the mixture because the temperature of the oil will drop.
When you remove them, place them on a plate with absorbent paper.
Serve them hot or cold. Accompany them with tzatziki, yogurt dip and of course with a big greek salad! Bon appetit !
