Wash the cucumber very well. Grate the cucumber and add salt. Leave 15 min with salt and “squeeze” by removing the cucumber juice.

Tip

Otherwise, you can cut the cucumber in 2 by removing the central seeds and so you avoid the cucumber juice. Grate the cucumber.

Slice the garlic cloves.

Add in a bowl the folowing: greek yogurt, cucumber and garlic. If you used the 2nd way to cut the cucumber, you will need to salt a little. In some areas, grated carrot is added.

Add olive oil and mix very well. Add an olive at the end.

If you do not eat right away, cover with a film and put in the fridge.

Serve with julien-cut vegetables, toasts, pieces of bread, breadsticks. It can also accompany meat and especially meatballs.

Depending on your tastes, you can either add more cucumber or yogurt or garlic. In Greece, tzatziki is a bit strong.
