Dried white beans with tomato sauce or fasolia yahni is a very simple dish to make, healthy and vegan with lots of vitamins !
Ingredients
- 500 g dried white beans
- cup olive oil
- 2 medium chopped onions
- 500 g tomatoes in dices or a can of tomatoes
- salt
- pepper
Utensils
- 1 cooking pot
- 1 frying pan
Making
Wash the dried white beans, cover with cold water and bring to the boil. Then, soak for 1 hour.
Drain, cover them again with water and cook on low heat for 1h or until they are almost cooked.
In the pan heat the olive oil and cook the onions.
Add the tomatoes and then salt and pepper.
Bring the sauce to a boil and then add the beans. Cover the pan and let it simmer for about 20min.
Serve hot or cold with greek black olives and breadsticks or rusks. Another idea is to serve on toast.
