Youvetsi with leeks and mushrooms

Youvetsi with leeks and mushrooms is a delicious dish suitable for children and adults ! You will love it especially if you are a vegetarian!

Ingredients

  • 400 g kritharaki, small greek pasta
  • 100 ml extra virgin olive oil
  • 300 g white mushrooms, cut in slices
  • 1 leek cut in slices
  • 1 finely chopped onion
  • 1 finely chopped garlic
  • 200 g cherry tomatoes cut in half or tomatoes cut into small pieces
  • 800 ml hot water
  • 200 g gruyere in small pieces
  • 1 pinch of sugar
  • salt
  • pepper

  • 1 baking dish

Making

Preheat the oven to 200°C. Cut the mushrooms and the leek in slices, chop finely the onion and garlic, and at the end cut the cherry tomatoes.

In a large pot, heat the olive oil over high heat and sauté the mushrooms for 4-5 minutes, until golden brown.

Then, add in the pot the onion, leek and garlic, continuing to sauté for another 4 minutes.

Add the tomatoes, sugar, salt and pepper, lower the heat a little and cook for 8-10 minutes, until the sauce thickens slightly.

Add also the kritharaki (orzo) and hot water, mix well for 1 minute and pour the content of the pot into a baking dish.

Cook for about 15-20 minutes, until the kritharaki is soft and absorbs all the liquid.

Tip

You need to stir your kritharaki often and if necessary add more hot water.

When the kritharaki is ready, take the baking dish out of the oven. Add the cheese and put it back in the oven until it melts slightly.

You can add at this point also some dill.

The dish is accompanied by a glass of rosé or white wine!
