The salad of Mavromatika of Feneos is one of the traditional vegan dishes of greek cuisine that we can also find in all greek tavernas! This salad made with black-eyed peas can also be a main course!
Ingredients
- 500 g mavromatika, black-eyed peas of Feneos
- ½ cup extra virgin olive oil
- 4 tablespoons pomegranate vinegar
- 2 scallions or spring onions
- salt
- freshly ground pepper

- 1 strainer
Making
First, boil the mavromatika until they are tender.
At the same time, cut the spring onions into rings.
When the mavromatika peas are ready, drain well.
Pour the mavromatika into a salad bowl and add the spring onions.
Then add extra virgin olive oil, pomegranate vinegar and season the salad !
If you want you can add diced tomatoes, green olives from Chalkidiki or baked black olives or Kalamon olives, red onions or celery, peppers cut in cubes or Florina peppers.
Serve lukewarm or even at room temperature! Serve with breadsticks or rusks (paximadia) !
