- 2 cups organic greek sultana raisins
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground clove
- 1 cup extra virgin PGI olive oil from Lesvos
- 2 cups sugar
- 1 cup orange juice
- ½ cup water
- ¼ cup Metaxa 12 stars
- grated orange zest
- icing sugar

- 1 baking pan (preferably 22 x 32 x 5 cm)

Making
First, grease and flour the dish in the oven preferably 22 x 32 x 5 cm. Preheat the oven to 180 ° C.
Sift together the flour, baking powder, baking soda, salt, cinnamon and ground clove.
Pour the olive oil. Then add the sugar and organic sultana raisins and mix well.
Stir in water, orange juice, Metaxa 12 stars and orange zest.
Instead of orange juice, you can use red wine.
Pour the mixture into the baking pan and cook in a medium oven (180 ° C) for about 1 hour.
When the cake is cold, sprinkle with icing sugar and cut into squares.
Serve with greek coffee or mountain tea or vitality infusion!
