The State in Schuylkill, a social club in Pennsylvania, is reputed to have been the origin of Fish House Punch. The first mention of the Punch, even though not yet by that name, is in the notes of the secretary of an embassy of Virginia Commissioners named William Blake.
The legend says that Fish House Punch was George Washington‘s favorite, while once on a visit he drank so much that he could not make any entry to his diary for a few days.
By 1885, Fish House Punch was that famous that “The Cook”, a weekly New-York magazine published:
“There’s a little place just out of town,
Where, if you go to lunch,
They’ll make you forget your mother-in-law
With a drink called Fish-House Punch.”
Ingredients
- 25 ml Cognac VS
- 25 ml Rum
- 25 ml Crème de Pêche
- 100 ml Sparkling Lemonade
- pink grapefruit wheel
- ice
Utensils
- 1 tall glass
Making
Fill a tall glass with ice.
Add the cognac, rum and crème de pêche.
Then, top up with Three Cents Sparkling Lemonade.
Garnish with a fresh pink grapefruit wheel.
Serve your cocktail with roasted pistachios from Aegina, handmade Cretan tomato and oregano biscuits or a selection of Kalamon, Throuba or Green olives !
For a more accurate recreation of the original recipe, but also a more boozy, instead of using peach liqueur and cognac together, add a good quality peach brandy with aged Rhum together.
