Spanakopita or spinach pie with phyllo dough (in that case) is a traditional Greek dish that can be served as a mezze or a main dish or as a snack !
Ingredients

- 1.5 kg spinach
- 1 cup olive oil
- 2 spring onions cut into slices
- 200 g feta
- 1 beaten egg
- chopped parsley
- chopped dill
- salt
- pepper

Making
Wash the spinach, chop finely. Add a little salt and rub them with your hand. Let stand for 1 hour. Express all the liquid well.
Stir in 1/4 cup olive oil, spring onions, feta, egg, parsley, dill and pepper.
Grease the baking dish of 35 x 25 x 5 cm preferably, put the first layer of Phyllo well oiled. Oil another 6, let them overflow the dish.
Spread the stuffing, cover with 6 layers, oiled dough.
Brush the top with oil, notch the top three sheets 7.5 cm apart over the entire length of the laminate.
Moisten with water to prevent the dough from swelling.
Bake at 190 ° C for about 40 minutes. Let cool, cut into squares, serve hot or cold.
