Because some ovens are slow to bake the meat, we will first cook the meat in the pot and then put it in the oven.
Ingredients
- 500 g kritharaki (orzo)
- 1 kg pork in small pieces
- 1 onion, finely chopped, finely chopped
- ½ cup olive oil
- 250 ml tomato sauce
- 1 glass white wine
- salt
- pepper
- 1 cinnamon stick
- hot water

Making
Chop the onion. Put the olive oil in the saucepan and cook the meat until it is browned.
You can instead use beef or chicken breast instead of pork.
When you brown the meat, add the onion and stir for 2-3 minutes.
If you want at this point you can add the wine.
Add half the amount of tomato sauce, about 3 glasses of warm water and let the meat boil.
At that point, you can add the cinnamon stick.
Cook the meat for about 1 hour. Taste it from time to time to see if it’s cooked.
When ready, remove the meat, put the sauce in a baking dish, add the rest of the tomato sauce and top with water (preferably hot).
Add the salt, a little more olive oil, and when it boils, add the kritharaki (orzo), stir 3-4 times until it is cooked.
When it is almost ready, you add the meat. Cook for 2-3 minutes.
